Cherry Vanilla Steel Cut Oats
Recipe inspired by from Apple A Day
Makes approx 4 cups of oatmeal
4 cups water
1 cup steel cut oats
1/2 cup dried cherries
1 tsp vanilla extract
2 tbs ground cinnamon
1 tsp nutmeg
Splash milk per serving
1 tsp Rhubarb Strawberry preserves per serving
Directions:
Bring water to a boil. Stir in oats and cherries. Reduce heat to low and simmer,stirring often. After about 20 minutes (and oatmeal starting to come together), stir in cinnamon, nutmeg and vanilla. Continue to simmer until water is absorbed, approx 30 minutes total.
When serving, add a splash of milk and stir in Tastefully Simple Rhubarb Strawberry preserves.

Pesto Prosciutto Chicken Rolls
A Running Mama original recipe
8 Thin cut chicken breasts
4 roasted red peppers, cut in half
1/2 cup pesto
8 slices prosciutto
1 cup Italian blend cheese
2 cups marinara sauce
Parmesan cheese
Salt and pepper
Preheat oven to 350
Lay chicken breast between two sheets of wax paper and pound them thin (I do this even if they are thin cut). Arrange on a cutting board. Season with salt and pepper.
Spread each breast with pesto, then layer with a slice of prosciutto, 1/2 a roasted red pepper, and a sprinkle of cheese.
Ladle sauce on the bottom of a baking dish. Roll each breast and place seam side down on the sauce. Cover with more sauce and sprinkle with Italian blend cheese and Parmesan.
Bake for 45 minutes. Open the oven door and broil for the last 2-3 mins so cheese is brown and bubbly.

Bruschetta Chicken Burgers

I have to say I am rather impressed with myself tonight! I love when I can whip something up without a recipe and have it come out delicious! These burgers were a big hit! Super tasty!!
I am very happy that this turned out to be my 50th entry!
Bruschetta Chicken Burgers
A Running Mama original recipe
Bruschetta:
2 tomatoes, seeded and chopped
1 garlic clove, minced
fresh basil
few dashes of dried basil
few dashes of salt
drizzle of olive oil
drizzle balsamic vinegar
sprinkle shredded asiago cheese
Mix together and set aside
Burgers:
1 Lb ground chicken
1 egg
1/2 cup ricotta cheese
1/2 cup parm
3/4 cup breadcrumbs
1 tsp red pepper flakes
2 tsp dried basil
2 tbs Tastefully Simple Tomato and Garlic Pesto Dip Mix
2 cloves minced garlic
fresh black pepper
Mix ingredients together and form into burgers. Grill burgers until cooked through and melt provolone cheese. Top with bruschetta and place on a soft Italian roll.
YUM!

Tastefully Simple Garlic Pesto Parmesan Chicken
I have a few friends who are Tastefully Simple consultants so I have quite a few of their products on hand. They are all great, I've never been disappointed with anything I've tried.I have been looking for a reason to use the Tomato & Garlic Pesto Dip Mix so when Gillian posted the following recipe, I was excited to give it a try. The recipe originally calls for the use of the Spinach & Herb Dip Mix, but I replaced it with the Tomato & Garlic Pesto.
Garlic Pesto Parmesan Chicken

Ingredients
2 beaten eggs
3/4 cup grated Parmesan cheese
2 Tbsp. Tomato & Garlic Pesto Dip Mix
4 - 6 boneless, skinless chicken breasts
Directions
Pour eggs in shallow dish. Combine cheese and Tomato & Garlic Pesto Dip Mix. Dip chicken in egg; roll in Parmesan cheese mixture. Place in greased baking dish; bake at 350° for 20-30 minutes.
I broiled the chicken when it was done for a few minutes to brown up the cheese. The chicken was moist and very tasty. I served it with a Caesar salad.
