Chorizo Spaghetti

I love chorizo and when I saw it at Wegman's this weekend when picking up a few odds and ends, I had to grab it. I haven't done my big shopping for the week and didn't have a lot of food on hand, but I threw this together this morning and hoped for the best. The sauce was a bit thinner than I would have liked (didn't have tomato paste) but the flavor was awesome!

I made this in the morning and put it in the crockpot so that all I had to do was make the pasta when I got home, but it could just as easily simmer on the stovetop.

Chorizo Spaghetti

Ingredients:

4 Chorizo sausage links, sliced
olive oil
2 large garlic cloves, minced
1/2 large onion, sliced
1 15 oz can diced tomatoes
1 8 oz can tomato sauce
1/4 cup red wine
Dried basil
Italian blend cheese

Directions:

Heat olive oil in a pan on medium heat. Add in the garlic and chorizo, cook until chorizo crisps up a bit. Place in the crockpot. Add in all the other ingredients, except the cheese. Cook on low for approx 6 hours.

Serve over pasta with a bit of Italian blend cheese.

Upside Down Fettuccine & Sausage Bake

I've had this recipe saved for awhile, and honestly I am not even sure what the source is. I liked how the pasta was layered on the bottom with the sausage and sauce on top, different than other baked pasta dishes. I wouldn't say it was an amazing dinner, but it was a tasty meal.

Upside Down Fettuccine & Sausage Bake

Ingredients:

8 ounces fettuccine noodles, freshly cooked
1/2 pound Italian turkey sausage, casing removed
1/4 cup chopped onion
1 - 14.5 ounce can diced tomatoes
1 teaspoon oregano
1/2 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
3 eggs, lightly beaten
2 tablespoons melted butter
2 tablespoons parsley flakes
1/4 teaspoon garlic powder

Directions:

Brown sausage in a medium skillet. Add onion during the last few minutes,. Drain off excess fat. Cook the fettuccine according to directions. Add entire can of tomatoes (including liquid) to the sausage mixture. Add the oregano and bring to a boil. Turn heat to low and simmer for 20 minutes, stirring occasionally. Stir in mozzarella cheese. Sprinkle 1/4 cup of the Parmesan cheese over tomato mixture.

Mix the eggs, 1/4 cup of Parmesan cheese, butter, parsley and garlic powder together in a separate bowl. Toss the noodles with the mixture. Spread noodle mixture in a 10-inch quiche or cake pan. Pour the sausage mixture over the top. Bake, uncovered, at 350 degrees for about 25 minutes or until bubbly. Sprinkle with additional cheese, if desired. Cut into wedges, serve.

Crockpot Lasagna

I'll admit I was skeptical, but this was awesome!!! I doubt I'll make it the regular way ever again!

Crockpot Lasagna
Recipe from
Christina Cooks

1 pound bulk Italian turkey sausage
1 medium onion, chopped (1/2 cup)
45 oz. homemade spaghetti sauce
2 teaspoons dried basil leaves
1/2 teaspoon salt
2 cups shredded mozzarella cheese (8 ounces)
1 container (15 ounces) part-skim ricotta cheese
1 cup grated Parmesan cheese
15 no boil lasagna noodles


1. Cook sausage and onion in 10-inch skillet over medium heat 6 to 8 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir in tomato sauce, basil and salt.
2. Mix 1 cup of the mozzarella cheese and the ricotta and Parmesan cheeses. (Refrigerate remaining mozzarella cheese while lasagna cooks.)
3. Spoon one-fourth of the sausage mixture into 6-quart slow cooker; top with 5 noodles, broken into pieces to fit. Spread with half of the cheese mixture and one-fourth of the sausage mixture. Top with 5 noodles, remaining cheese mixture and one-fourth of the sausage mixture. Top with remaining 5 noodles and remaining sausage mixture.
4. Cover and cook on Low heat setting 4 to 6 hours or until noodles are tender.
5. Sprinkle top of lasagna with remaining 1 cup mozzarella cheese. Cover and let stand about 10 minutes or until cheese is melted. Cut into pieces.

Sausage and Broccoli Penne Skillet

For dinner tonight I had planned on making sausage and spinach penne skillet, but realized that I didn't have a few of the key ingredients. My spinach wasn't good anymore and I didn't have any sundried tomatoes. I still used the same process, but changed it up a bit to suit what I had on hand. Turned out really good!

Sausage & Broccoli Penne Skillet

Ingredients:

1 tablespoon olive oil
1 pound Italian-style turkey sausage, casings removed
3 medium garlic cloves, minced finely
1 28 oz can diced tomatoes
3 cups low-sodium chicken broth
1/2 teaspoon salt
12 ounces (about 3 1/2 cups) penne pasta
2 broccoli crowns, florets removed and steamed (I used microwave)
1/2 cup grated Parmesan cheese
1/4 cup toasted pine nuts

Heat the oil in a 12-inch nonstick skillet over medium heat until hot and add in the sausage. Cook until lightly browned and no longer pink about 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.

Stir in the diced tomatoes, broth, and 1/2 teaspoon salt, then add in the pasta. Increase the heat to medium-high and cook at a strong simmer, stirring often, until the pasta is tender and the liquid has thickened, about 15-18 minutes (if you find the liquid is absorbing too quickly and the pasta is still undercooked, add a bit more water in small amounts until the pasta is cooked thoroughly).

Stir in the broccoli. Take off the heat, stir in the cheese and pine nuts. Season with salt and pepper to taste and serve immediately.

Mac & Cheese Muffins

I had no idea what we were having for dinner tonight until about 5:00, when I remembered that I bookmarked Mac & Cheese Muffins on my google reader. I ran to the kitchen...pasta, check! Cheddar, check! Milk, check!! We were in business. I used a combo of recipes (a popular Nestie recipe as my guide), put the mac & cheese into large muffin tins and baked. Money!

Mac & Cheese Muffins

Ingredients:

2 tbsp flour
1 tsp salt
1/4 tsp pepper
2 1/2 cups milk
2 tbsp butter
3 cups shredded cheddar cheese
1/4 tsp paprika

1/4 tsp nutmeg
8 oz. small macaroni, cooked al dente
Plain bread crumbs

Directions:

Preheat oven to 375. Spray large muffin cups with cooking spray.

In medium saucepan melt butter over medium heat. Add flour, salt and pepper and whisk until combined. Add milk slowly, stirring constantly over medium-high heat until sauce thickens. Remove from heat.

Stir in 2 1/2 cups cheese until melted. Season with paprika and nutmeg. Add macaroni. Pour into muffin tins and sprinkle with remaining cheese and breadcrumbs.

Bake uncovered at 375 degrees for 30 minutes or until lightly browned and bubbly.

Creamy Pumpkin Penne


I had high hopes for this recipe since I love pumpkin in savory dishes. While it was pretty good, I wasn't as impressed as I hoped to be. I did think that using cottage cheese for a low fat cream sauce was ingenious, so I will be using that technique again.

Creamy Pumpkin Penne
Recipe slightly adapted from Cara's Cravings by way
Cook Pray Love

Ingredients:

8 oz whole wheat penne pasta
2 tsp olive oil
1 small onion, thinly sliced
2 cloves of garlic, minced
about 2T chopped fresh sage
1 cooked chicken smoked sausage, sliced
1/2 cup low fat cottage cheese (1% milk fat)
1/2 cup pumpkin puree
1/2 cup nonfat milk
pinch of nutmeg
5oz torn spinach, thick stems removed
grated parmesan or pecorino romano cheese, optional

Preparation:

Heat olive oil in a skillet over medium-low heat. Add onions and cook gently for about 10-15minutes, until softened and beginning to caramelize. Add garlic, sage, and chicken sausage; continue to saute.

Meanwhile, cook pasta according to package directions.

In a blender, combine combine pumpkin, cottage cheese, and milk. Blend until no lumps are present. Add to sausage mixture in skillet and continue to cook over low heat. Season to taste with salt and freshly ground pepper, and a pinch of nutmeg.

Drain pasta and return to pot over low heat. Add sausage mixture and baby spinach, and toss together. Cover for a few minutes to let the spinach wilt. Serve with parmesan cheese, if desired.

Cheeseburger Pasta


Maybe it should be Turkey Burger Pasta?

This recipe is like homemade hamburger helper. Just as easy and so much better for you! I lightened it up a little more than the original recipe by using ground turkey breast and reduced fat cheese. Another winner from Allison, earning 5 stars from Zach!

Cheeseburger Pasta

Ingredients:

1 lb ground turkey breast
2 3/4 cups water
1/3 cup ketchup
1 tsp onion powder
2 cups elbow mac, uncooked (I used shells)
4 oz reduced fat velveeta, cubed

Directions:

Brown meat in a large skillet, drain.
Add water, ketchup, onion powder and mix well.
Bring to a boil and add mac. Simmer on med-low heat, covered, for 8-10 minutes (until pasta tender).
Stir in velveeta and cook until melted, stirring occasionally.

Chicken Tortellini Casserole

Wow, I actually cooked 2 nights in a row!!

This recipe was recommended to me by Allison, and like all the other recipes she recommends to me, this was a really yummy meal!



Chicken Tortellini Casserole

Ingredients:

8 oz tortellini
8 oz monterey jack cheese, shredded
1 lb chicken, cubed
flour
EVOO
1 onion, chopped
4 oz can sliced mushrooms, drained
1 can chicken broth
1/2 c sour cream

Directions:


Preheat oven to 300F.

Cook tortellini 5 minutes less than done time and drain.

Place in a greased 2.5 quart casserole. Spread 1/2 of cheese over tortellini.

Flour chicken and cook in EVOO until lightly brown. Remove chicken and put on top of tortellini & cheese. Cook onions in same pan until soft. Add broth and mushrooms and bring to boil. Simmer 5 minutes. Add remaining cheese and cook until melted. Take off heat and stir in sour cream. Pour over casserole.

Cover with foil and bake for 45 minutes.

Caprese Lasagna

This recipe caught my eye while I was browsing through my friend Lauren's blog. I feel like I've been in a little bit of a food slump lately and was looking for ideas. I love basil and tomatoes (and pasta of course!) so this went on my agenda for this week.

I liked it, but there are definitely a few things I would do differently. I would make it in a smaller baking dish (I used 9x13) and stack the lasagna a little higher. I will also dice the tomatoes next time instead of slicing them. I think my family would enjoy them more that way.

I will post the recipe as is, but I did use regular lasagna noodles instead of oven ready, so I cut the baking time to a half hour, followed by 5 minutes of broiling.

Caprese Lasagna
Recipe from

Ingredients:

2 tablespoons butter
2 cloves garlic, finely chopped or grated
2 tablespoons flour
1 cup milk
1 cup chicken stock
A few grates of fresh nutmeg
Salt and freshly ground black pepper
1 box oven-ready lasagna noodles
4 Roma tomatoes, thinly sliced
Half a bunch basil, chopped (about 30 leaves)
1 cup shredded mozzarella cheese

Preparation:

Pre-heat the oven to 375ºF.

Place a large saucepot over medium-heat and melt the butter. Add the garlic to the pan and cook until aromatic, about 1 minute. Sprinkle the flour over the butter and garlic and cook for about 1 minute. Whisk the milk and chicken stock into the butter-flour mixture and bring up to a bubble. Add the nutmeg, season with salt and freshly ground black pepper and simmer until thickened, 3-4 minutes.

Assemble the lasagna by ladling a small amount (about 1/4 cup, just eyeball it) of the sauce into the bottom of a 9-inch x 13-inch baking dish and laying three lasagna noodles over the sauce. Top the noodles with about a third of the sliced tomatoes, a third of the basil, 1/4 cup of sauce and about a third of the shredded cheese. Repeat until all ingredients are used up, topping the lasagna off with a final layer of sauce and shredded cheese.

Cover the pan with foil and bake the lasagna for 30 minutes. Remove the foil from the baking dish and bake another 15 minutes until the cheese is melted and the sauce is bubbly. When ready to serve, top with the remaining chopped basil leaves

Pesto Chicken Stuffed Shells

I was really looking forward to making this recipe when I came across it a few weeks ago. The flavors are right up my alley and I love stuffed shells. Overall, I really liked it, but next time I will add a sauce, probably a light Alfredo. Even a marinara sauce would be good with it. Now I am anxious to make it again! Look for this recipe revisited soon.

One thing I definitely won't change is the panko topping. YUM!

Pesto Chicken Stuffed Shells

Joelen's Culinary Adventures

Ingredients:

1 lb box jumbo pasta shells
4oz cream cheese, softened
1/2 cup sour cream
1 cup freshly shredded Asiago cheese + 1/4 cup for topping
1/4 cup Mozzarella cheese
6 tbs prepared pesto (homemade or store bought), plus more for drizzling
4 cups shredded cooked chicken*
2 cloves garlic, minced
1/4 cup chopped sun dried tomatoes
1 cup panko bread crumbs
3 tbs butter, melted
salt and pepper to taste

Directions:

In a large pot over high heat, boil water and prepare pasta shells as directed on package. Cook pasta shells only until al dente. The pasta will finish cooking when the dish is baked. Drain the pasta shells and set aside.

In a large bowl, combine chicken, pesto, cream cheese, sour cream, asiago cheese, garlic, sun dried tomatoes, and salt and pepper. Fill the pasta shells with the filling and place in a baking dish. Drizzle with pesto. Sprinkle the remaining 1/4 cup of asiago cheese and the mozzarella cheese over filled shells.

Combine melted butter and panko bread crumbs and cover shells and cheese.

Preheat oven to 350 degrees and bake shells uncovered for 30 minutes or until shells are bubbling hot and cheese melts.

*I cooked 1 lb of boneless skinless chicken breasts in the crockpot for 6 hours with a little bit of chicken broth. Chicken was moist and shredded very easily.

Creamy Taco Mac

After seeing this recipe in several blogs lately, I put it on my to do list. It looked easy, not terribly bad for you, and really delicious. I was definitely wondering if it would live up to all the hype. After seeing rave reviews on one of my favorite blogs, I finally picked up all the ingredients.

It was definitely a good meal. And I can tell its one of those "even better when reheated" dishes!

Creamy Taco Mac

Ingredients:

1 lbs ground turkey breast
1/2 onion, chopped
8 oz dry pasta + 1 cup reserved pasta water (I used medium shells)
1 can (14.5 oz) petite diced tomatoes
4 Tbsp mild taco seasoning
4 oz reduced fat cream cheese
1/2 cup lite sour cream
1 cup frozen corn
1/2 cup reduced fat Mexican blend cheese
salt & pepper

Directions:

Bring a large pot of salted water to boil and cook pasta per directions. Reserve one cup of pasta water.

Over medium heat, brown ground turkey until no longer pink. Add onion and cook for 5 minutes. Add taco seasoning and diced tomatoes. Allow to simmer over low heat for 5 minutes. Add cooked pasta, reserved water, cream cheese, sour cream and corn. Give it a good stir until cheeses are melty and incorporated. Simmer over low heat for 2-3 minutes. Season with salt & pepper, as desired. Top off with mexican cheese for extra cheesy goodness.

Baked Mac and Beef

It is a comfort food kind of day. It has been rainy, cold and dark all day long. This meal was inspired by our friend Ryan's mom's Mac and Beef. She always sends a big pot of it down with him when he comes to visit. I have to say my version was pretty close. It was creamy with a good kick to it.

I almost always sub ground turkey for ground beef, but this dish felt like it needed the real deal.

Baked Mac and Beef
A Running Mama Cooks Original Recipe

Ingredients:

1.25 lbs 95% lean ground beef
1 lbs elbow macaroni (I used Dreamfields)
1 onion, chopped
1 cup chopped carrots
1 6oz can tomato paste
2 14.5 oz cans fire roasted diced tomatoes
1/4 cup white wine (would have used red if I had it)
1 tsp red pepper flakes
1/2 tsp garlic powder
1/2 tsp dried basil
bay leaf
salt and pepper
8 oz cheddar cheese, cubed (I had 2% Velveeta on hand)

Directions:

Boil water in a large pot and cook elbows until al dente.

Meanwhile, brown beef in a large skillet. Drain fat. Season with salt, pepper, garlic powder and red pepper flakes. Add onion and carrots and saute until tender, about 5-7 mins.

Add tomato paste and combine with beef. Stir in diced tomatoes and wine. Add dried basil and a bay leaf. Simmer.

Remove bay leaf. Mix cooked elbows with sauce and pour into a large baking dish. Stir in cheese. Bake on 350 for 20 minutes.

Fresh Tomato and Zucchini Bow Tie Pasta

I made this quick pasta as a side dish to tilapia tonight. It was a nice, light sauce and the fresh tomatoes and zucchini were really yummy.

Fresh tomato and zucchini bow tie pasta
A Running Mama Cooks Original Recipe


Ingredients:

1/2 lb bowtie pasta ( I used Barilla Plus)
8 cloves garlic
Olive oil
16 baby roma tomatoes, cut into half
2 zucchini, cut into chunks
1/2 cup white wine
1/2 tsp red pepper flakes
1/4 cup fresh chopped basil
1/4 cup fresh flat leaf parsley, chopped
Salt and pepper
Handful Parmesan cheese, plus more for the table


Directions:

Bring a pot of water to a boil. Salt water and add bow tie pasta.

Coat bottom of a medium sized pan generously with Olive oil. Heat over medium heat. Add garlic and saute until fragrant, be careful not to burn. Add zucchini and cook for a few minutes, until tender. Add tomatoes, white wine, red pepper flakes, basil, parsley, salt and pepper. Simmer until pasta is cooked. Stir in bow ties and toss with Parmesan cheese.

Angel Hair Carbonara

This Rachael Ray recipe is one of the first ones I made a few years ago when I was first learning how to cook. After having Carbonara at a restaurant this weekend, I knew I had to make this this week. I like that it doesn't have any cream in it yet is still creamy.

Angel Hair Carbonara
Adapted from Rachael Ray

Ingredients:

Salt
1 pound Angel Hair pasta
1/2 pound pancetta, cured Italian meat, available at deli counter, chopped
Drizzle extra-virgin olive oil, plus 2 tablespoons (2 turns around the pan)
5 cloves garlic, finely chopped
1/4 teaspoon crushed red pepper flakes, a few pinches, crushed in palm of hand
3/4 cup dry white wine or chicken stock
2 large egg yolks
3 tablespoons (about 2 palmfuls) grated Parmigiano Reggiano, plus more, for sprinkling
A handful fresh parsley leaves, finely chopped
A few grinds black pepper

Directions:

Place a large pot of water on the stove to boil. When water is rolling, add salt and pasta and cook to al dente, about 8 minutes, reserving 1/4 cup pasta water.

While pasta cooks, heat large skillet over moderate heat. Saute pancetta in a drizzle of oil until it browns, 3 to 5 minutes. Add extra-virgin olive oil, garlic, and crushed pepper flake. Saute garlic 2 minutes. Add wine or stock to the pan and reduce liquid by half, 2 minutes.

Beat together egg yolks, cheese, and while whisking vigorously, stir in a ladle of the boiling pasta water. Beat in parsley and pepper and set aside.

Drain pasta. Add pasta to pan with sauce. Toss pasta with pancetta, then add egg mixture and toss 1 minute, then remove from heat. Continue to toss until sauce is absorbed by and thickly coating the pasta. Adjust seasonings with salt and pepper and serve with extra cheese, for passing.

Sausage and Spinach Penne Skillet

Another winner from Allison. Delicious pasta meal! Loved the spinach, sun dried tomatoes and pine nuts. Yum! It immediately got added to the "favorites" category.

Sausage & Spinach Penne Skillet


1 tablespoon olive oil
1 pound Italian-style turkey sausage, casings removed
3 medium garlic cloves, minced finely
3 1/2 cups water
2 1/2 cups low-sodium chicken broth
1/2 cup oil-packed sun-dried tomatoes, rinsed and chopped fine
1/2 teaspoon salt
12 ounces (about 3 1/2 cups) penne pasta
1 (6-ounce) bag baby spinach
1/2 cup grated Parmesan cheese
1/4 cup toasted pine nuts

Heat the oil in a 12-inch nonstick skillet over medium heat until hot and add in the sausage. Cook until lightly browned and no longer pink about 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.

Stir in the water, broth, sun-dried tomatoes, and 1/2 teaspoon salt, then add in the pasta. Increase the heat to medium-high and cook at a strong simmer, stirring often, until the pasta is tender and the liquid has thickened, about 15-18 minutes (if you find the liquid is absorbing too quickly and the pasta is still undercooked, add a bit more water in small amounts until the pasta is cooked thoroughly).

Pasta Cordon Bleu


First of all, I am sorry I have been MIA! I can't believe it's been a week since I've updated. Life has been busy so I have been sticking with easy, quick meals (that aren't that exciting!). Since this week isn't looking any less busy, I decided to take my free afternoon to make a yummy pasta dish so I have left overs for a few days. Zach is going away for the long weekend so this will hold me over.

I ran into this recipe awhile back and have been waiting for an opportunity to make it. I made quite a few changes, all incorporated in the recipe below. I eliminated a lot of the butter and used all reduced fat or fat free ingredients. The taste or richness didn't suffer a bit. It was really good!

Pasta Cordon Bleu
Recipe Inspired by Dunne at With a Cherry on Top by way of
Amy's New Kitchen
Serves 6

1 lb. pasta (I used cellentani)
2 tbs olive oil
1 shallot, chopped
1 tsp red pepper flakes
1 lb chicken breasts, cubed
1/2 cup pancetta, cubed
1 1/2 cups skim milk
8 oz. fat free cream cheese (softened)
2 tbs dried minced onion
2 cups reduced fat swiss cheese, shredded
Salt
Pepper
1 cup panko crumbs
1 tbs butter

Directions:

Bring a large pot of water to a boil over med-high heat. Salt it and add the pasta; cook until al dente (about 11 minutes). Drain and return to the pot.

Heat 2 tbs olive oil in a pan. Add chopped shallot and cook until softened. Add chicken, season with red pepper flakes, salt, pepper and paprika. Saute until chicken is mostly cooked through (3-4 mins). Add pancetta and cook for a few more minutes. Add chicken mixture to cooked pasta.

Preheat oven to 400. In a medium saucepan, combine the milk, cream cheese and minced onion over low-medium heat. Cook, stirring frequently, until it becomes a smooth texture (about 5 minutes). Stir in the Swiss cheese and season with salt and pepper to taste. Pour over chicken and pasta.

Transfer pasta to a baking dish (sprayed with cooking spray) and top with Panko crumbs. Dot butter over crumbs and bake for 25 minutes. Open the oven door and bring temp up to broil. Broil for 2-3 minutes until top is browned.

Pesto Prusciutto Chicken Rolls

We had our former neighbors and good friends Debbie and Brian over for dinner tonight. I have been meaning to make this recipe for awhile, and thought this was a good opportunity. It was inspired by a recipe I saw on the NJ Nest awhile back, and I've made it several times, always a winner.

Pesto Prosciutto Chicken Rolls
A Running Mama original recipe

8 Thin cut chicken breasts
4 roasted red peppers, cut in half
1/2 cup pesto
8 slices prosciutto
1 cup Italian blend cheese
2 cups marinara sauce
Parmesan cheese
Salt and pepper

Preheat oven to 350

Lay chicken breast between two sheets of wax paper and pound them thin (I do this even if they are thin cut). Arrange on a cutting board. Season with salt and pepper.

Spread each breast with pesto, then layer with a slice of prosciutto, 1/2 a roasted red pepper, and a sprinkle of cheese.

Ladle sauce on the bottom of a baking dish. Roll each breast and place seam side down on the sauce. Cover with more sauce and sprinkle with Italian blend cheese and Parmesan.

Bake for 45 minutes. Open the oven door and broil for the last 2-3 mins so cheese is brown and bubbly.

Chicken Parm with Spaghetti and Sausage Marinara

On Monday, I had a craving for chicken cutlets, so I made a double batch. We had just enough left over to have Chicken Parmesan tonight! I also had a little frozen marinara sauce, so I defrosted it in my small crockpot. I heated up the cutlets, spread on some sauce and topped with Italian blend cheese. Popped it under the broiler and it was done!

On the side, I served spaghetti with a sausage marinara that I made fairly quickly. I was really happy with the end result.

Italian Sausage Marinara
A Running Mama original recipe

1 lb Italian sausage
1/2 diced onion
1 tsp EVOO
5 garlic cloves, minced
1/2 tsp red pepper flakes
28 oz can crushed tomatoes
14.5 oz can diced tomatoes
dash of dry red wine
dried basil
salt and pepper


Heat EVOO over med heat. Add sausage and brown. Add garlic, onions and red pepper flakes, cook until onions are soft. Season with salt and pepper.

Add crushed tomatoes, diced tomatoes and red wine. When sauce begins to bubble, reduce heat to low and simmer. Season with a generous amount of dried basil along with salt and pepper to taste. Serve over pasta

Birthday Dinner! Italian Mac n Cheese and Fried Onion Chicken Fingers

My baby girl turned 4 today. I cannot believe it!!! To celebrate, we had both sets of grandparents over for dinner. I decided to make a kid friendly meal that appealed to the adults as well.
First was Italian Mac n Cheese. I've been dying to try this Rachael Ray recipe and thought this was a perfect opportunity.

Italian Mac n Cheese

Ingredients:

1 pound ziti rigate, penne rigate or cavatappi (ribbed, hollow corkscrews)
1 pound Italian bulk sweet sausage
(I used turkey sausage)
2 tablespoons extra-virgin olive oil
1 tablespoon butter
3 or 4 cloves garlic, chopped
12 crimini mushrooms, sliced
Salt and pepper
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup heavy cream
1 (10-ounce) sack, 2 1/2 cups, shredded Italian 4 cheese blend, available on dairy aisle
1 can diced tomatoes, drained well
1 teaspoon hot sauce (recommended: Tabasco), optional
1/2 cup Parmesan, a couple of handfuls

Directions:

Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.

In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.

Preheat broiler to high.

To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.

Combine cheese sauce with sausage and pasta, transfer to baking dish, casserole or oven safe serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.

Next was a twist on one of Cecily's favorite, chicken fingers. We recently discovered that she loves French's Fried Onions. I remembered making chicken breasts breaded with them a long time ago and loving it. It did not disappoint!

French's Fried Onion Chicken Tenders

Ingredients:

2 lbs chicken tenders
3 eggs
2 cans French's Fried Onions

Directions:

Preheat the oven to 400.
Beat eggs and place in a shallow bowl. Place fried onions in a ziplock bag and crush (I used a rolling pin). Put broken up onions in another shallow bowl. Coat tenders in egg, then the onions. Place on a baking sheet and bake for 20-25 mins.
Serve with honey mustard.

I also served a spinach salad. I had this at Allison's house last Saturday and it was so good. I used 2 bags of baby spinach, 1/2 lbs turkey bacon, sliced mushrooms, thinly sliced red onion and balsamic vinaigrette.

Spinach Lasagna Rolls

Nothing better than lasagna, such good comfort food! I really liked this twist on regular lasagna from Gina's Weight Watcher's Blog, they were cute and delicious. Here is the original recipe.

Spinach Lasagna Rolls
Adapted from Gina's Weight Watchers Recipes


Ingredients:

8 lasagna noodles, cooked
10 oz frozen chopped spinach, thawed and completely drained
15 oz part skim ricotta cheese
1/2 cup grated Parmesan cheese, plus more
1 egg
salt and fresh pepper
32 oz homemade marinara sauce
8oz part skim mozzarella cheese, shredded

Directions:

Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with mozzarella cheese and a sprinkle of Parmesan. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Remove foil for the last 5 mins. Open the oven door and broil until the cheese is browned and bubbly. Makes 8 rolls.
