The crockpot definitely saves my life on the nights that I teach at the gym. The last thing I want to do is cook after getting home at 8 and having to put both kids to bed! I didn't have a plan for dinner tonight but after taking a look through my cabinets and fridge, I put together this Chicken Taco Soup. I was hopeful that it would come out tasty, and I was right! It was super flavorful, had a little kick, was ready when I got home and, best of all, is super low in points!

Crockpot Chicken Taco Soup
A Running Mama Cooks Original
4 servings, 5 WW points plus per serving
Ingredients:
1 lb boneless skinless chicken tenders, cut into chunks
Olive oil cooking spray
1/2 large onion, chopped
1/2 yellow pepper, chopped
1 tbs minced garlic
14.5 oz can diced tomatoes
4 cups vegetable broth
1 packet low sodium taco seasoning
4.5 oz green chili's, drained
1.5 cups frozen corn
Directions:
Heat pan to medium heat, spray generously with cooking spray. Add chicken and brown on all sides. Add onion, pepper and garlic and cook for 5 more minutes.
Spray crockpot with cooking spray. Add chicken and vegetables. Add the rest of the ingredients and cook on low for 6-8 hours. Serve with tortilla chips, sour cream and/or a little bit of Mexican cheese on top.

I made the Weight WAtchers Slow cooker lasagna yesterday...SO GOOD! I am always hesitant about noodles in the crock pot but this was GREAT!

This is great! We have friends over for dinner every other week, and usually do something in the Crock Pot, so this is perfect!

Made this one today. I had plans to make tacos this week but I decided to make this instead. LOVE the crockpot. Only thing I did differently was I used ground turkey because that is what I had on hand. It was delish! Keep those recipes coming! =)
This was great, I made it yesterday the only thing different that I did was used 2 cups ff chicken broth and 2 cups of water (I forgot to get the veggie broth). I made up my own serving though and figure it can't be that bad, I certainly did not eat a quarter of the soup it made :)
